Jerusalem artichokes AKA Sunchokes

I am always on the hunt on various things I could grow myself.  I have a very tiny front yard and a very small back yard.  The backyard is lacking in sunlight in the summer because of the trees that aren't on my property.  The front yard gets full sunlight.  This was our 2nd summer with a above ground planter.  We grew tomatoes, white eggplant, peppers, and herbs.  I would love to expand and just kind of cover what little we have land wise with planters.


As you can see that it isn't a very big planter, however we were amazed what got out of it production wise.  Never in a million years did I think we would end up with so much food.  Now I just need to learn how to can/put up my goods so I don't have to shop as much at the grocery store/farmer's market.


One of the foods I would like to add to our list of goodies is the Jerusalem Artichoke or also know as the Sunchoke.  I love artichokes but hate how much is wasted to get to the "good part."  Many of my friends that have gotten to try these say they taste just like an artichoke but however without all the waste.  And it is super easy to fix since it is a tuber.  I know I missed ordering this fall for next year, but I am super excited to add these in the future to our diet.
